I’ve just booked a holiday to Thailand which means I need to start getting beach body ready. EEEK.
To help get me ready for jumping around in bikinis and shorts, I’ve started doing boot camp and boxing a couple of times a week. I’m bad with hunger pangs anyway, but after exercise I’m like a starved lion raiding every cupboard in sight.
These energy balls are a great way to refuel after a workout, hit that sweet craving, are really simple to make and can be stored for up to 3 weeks. In other words, they are balls of perfection.
There a plenty of amazing recipes for these, and you’ve probably tried one of two, but this is by far my favourite (accidental) recipe!
I use walnuts, almonds and cashews, but you can use any nuts you like. I personally love using walnuts as I love the stronger taste they add.
- 12 medjool dates
- 1 1/2 cups of nuts – two variations at least. (I used almonds, cashews and walnuts)
- 1 tbsp ground flax seed
- 1 tbsp chia seeds
- 2 tbsp sunflower seed
- 2 tbsp goji berries
- 1 tbsp raw cacao powder
- 1 tbsp maple syrup
- Place everything in your blender and blitz for around 2-3 minutes or until a sticky dough has been formed. If it isn’t sticky enough, add more dates until ready
- Scoop out the mixture and shape into balls
- If you haven’t already eaten them all, keep them in the fridge for the perfect post workout snack!
The key ingredients are the dates, nuts and maple syrup – the others are optional! This means you can pick and choose which extras you add to they are catered to your preferred taste.
Each bite tastes like indulgent, sticky, chocolate fudge – oooh it’s too much! I can’t get enough, and neither can my brother who keeps pinching them after his triathlon training, so I know you will love them too.
